Thai Inspired Miso Soup Recipe

Thai Inspired Miso Soup
This fragrant and wholesome Thai inspired miso soup is perfect for a chilly rainy day.

Ingredients:
- 1 tablespoon extra virgin olive oil
- 2 tablespoons garlic, minced
- 1 tablespoon ginger, minced
- ¼ cup shallots, sliced
- 3 stalks green onion, sliced
- 6 cups water
- 4 tablespoons miso paste
- 1 cup shitake mushrooms, sliced
- 1 ½ tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoon sesame oil
- 8 ounces firm tofu, diced
- 2 cups sugar snap peas
- ¼ teaspoon salt
- 3-5 stalks Thai basil leaves
- 2 stalks green onion, diagonally sliced
Optional:
- Ground white pepper
- Red pepper flakes
- Lime
Instructions:
- Heat a large pot on low-medium heat, add extra virgin olive oil, garlic, ginger, shallots, and the sliced green onions. Fry until garlic turns lightly brown.
- Add water to the pot and turn up the heat to bring to a simmer. Simmer for 5 mins. Then add miso paste, shitake mushrooms, soy sauce, rice vinegar, and sesame oil. Turn up heat and bring to a boil. Boil with lid on for 20 minutes.
- Add tofu, sugar snap peas, and salt (to taste). Cook for an additional 3-5 minutes. Top with fresh Thai basil and green onions. (Optional: Add ground white pepper, red pepper flakes, and freshly squeezed lime juice). Serve with a side of jasmine rice and Enjoy!
Notes:
• For some heat add the optional red pepper flakes and ground white pepper.
• Try it with lime to add more zing!
• Add more soy sauce if you need more depth to the soup.
