Toasted Pesto Sandwich w/ Smoked Tomato Slices
This herbaceous pesto balances well with the sweet onions and savory smoked tomato slices to make a scrumptious toasted vegan sandwich.

Ingredients:
Pesto
- 2 cup fresh basil leaves
- 1 teaspoon fresh lemon juice
- 1 cloves garlic
- 1/3 cup olive oil
- 2 tablespoons nutritional yeast
- Pinch of salt
- Freshly ground black pepper
Sandwich
- 2 tablespoons olive oil
- 1 yellow onion, sliced
- 6 slices bread
- 6 tablespoons vegan mayonnaise
- 6 slices Field Roast smoked tomato deli slices
- 3 slices vegan cheddar cheese
Instructions:
Pesto
- In a food processor add basil, lemon juice, and garlic. Blend until smooth homogenous consistency. Then, while mixture is still blending gradually drizzle in olive oil. Mix in nutritional yeast. Add salt and black pepper to taste. Set aside.
Sandwich
- Heat a medium frying pan over medium-high heat and add olive oil. Add in the sliced onions and fry for 10 minutes, until fully caramelized. Set aside.
- Heat a large frying pan over medium heat. Take two slices of bread and spread a tablespoon of mayonnaise on one side of each slice. Place the bread with the mayonnaise side down in the pan.
- Spread some pesto on one slice of bread. Put one slice of cheese, two smoked tomato deli slices, and some caramelized onions on top of the bread with pesto. When the other slice of bread is toasted, place it on top of the onions. Set aside and repeat two more times to make two more sandwiches. Cut in half and enjoy!
Notes:
• If you can’t find the vegan ingredients use your favorite cheese and deli meat. This sandwich is great vegan/non-vegan!
