Buttery Basil Shells w/ Roasted Cauliflower
This easy buttery pasta pairs deliciously with some tasty caramelized roasted cauliflower florets. So simple, yet so flavorful!

Ingredients:
Roasted Cauliflower
- 1 head cauliflower (around 2 pounds), cut into 2-inch florets
- 3 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
Buttery Basil Shells
- 6 ounces conchiglie pasta
- 3 tablespoons unsalted butter
- 2 cloves garlic
- 3 tablespoons reserved pasta water
- 1 tablespoon extra virgin olive oil
- 1 tablespoon basil, chiffonade
- Salt and red chili flakes
- Freshly grated parmesan
Instructions:
Roasted Cauliflower
- Place the cauliflower florets on a baking sheet. Drizzle the olive oil and toss with a spatula to thoroughly coat each floret. Lightly sprinkle some salt and black pepper. Arrange the florets so that they are evenly laid out and cut side down on pan. Place in oven and bake for 20-25 minutes, or until tender and deep brown on sides.
Buttery Basil Shells
- While cauliflower is baking, bring a large pot with water to a boil. Add pasta and cook until al dente. Reserve at least ½ cup of pasta water before draining the pasta. Drain the pasta with a colander and run under cool water to stop cooking.
- In the same pot add the butter and garlic. Turn heat to medium-low. Cook garlic with butter for about two to three minutes and then add the pasta back in. Mix around the pasta and the pasta water a tablespoon at a time. Add the olive oil and cook for another two to three minutes. Toss in the basil, and sprinkle with salt and red chili flakes to taste.
- Freshly grate some parmesan on top of the pasta when serving pasta with a side of roasted cauliflower.
Notes:
• Serve with lemon wedges to squeeze on top to help add an extra layer of flavor.
