Chocolate Basil Kettle Corn Recipe

Chocolate Basil Kettle Corn
Shake up your plain popcorn for some chocolatey, basil flavored sweetness with this recipe!

Ingredients:
- 4 tablespoons palm sugar
- 1 tablespoon basil
- 1 tablespoon unsweetened cocoa powder
- 1½ tablespoon canola oil
- ¼ cup popping kernels
- ¼ teaspoon of salt
Instructions:
- With a mortar and pestle pound the basil into the sugar until the basil leaves are combined and not in huge pieces. Scoop the mixture out into a small bowl. Add the cocoa powder and mix together.
- In a large pot add the oil and heat on medium-high. Add two kernels in and wait until one pops. When the kernel pops add in the sugar mixture and mix to dissolve. Then add all the kernels in and constantly shake and shimmy the pot around the entire time to prevent the sugar from burning.
- When the popping starts to slow down, turn the heat down low. Then when you hear only one or two popping remove from the heat. Shake the pot around one last time and pour your popcorn into a large bowl. Sprinkle the salt on and mix it around to evenly distribute it. Let it cool for a few minutes and then you can enjoy!
Notes:
• Palm sugar usually comes shaped like a puck and to use it you simply cut it with a knife, using a slicing motion.
