Thai Basil Musubi w/ Egg

Thai Basil Musubi w/ Egg

A yummy way to enjoy one of Hawai'i's favorite ingredients, SPAM! With the addition of the delicious flavor from Thai basil.

Ingredients:

Rice
  • 1 cup short grain white rice
  • 2 tablespoons seasoned rice vinegar
Spam
  • 1½ tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon packed Thai basil
  • 4 slices Spam (about ½ can)
Egg
  • 3 eggs
  • 2 tablespoons packed Thai basil, chopped
  • 2 (8 x 9-inch) seaweed sheets

Instructions:

Rice
  1. Rinse rice in strainer moving rice around with hand until water runs clear. Place rice into medium sized pot and cook according to package directions (rice to water ratio for short grain rice is usually 1:1).
  2. When rice is done cooking transfer to large bowl. Fluff rice around with rice paddle and drizzle in seasoned rice vinegar. Mix and set aside.
Spam
  1. In a small bowl mix the soy sauce, sugar, and Thai basil together.
  2. In a medium frying pan over medium heat, fry the spam slices on both sides for about 3-4 minutes, or until lightly browned. Turn heat down to low and add soy sauce mixture to coat all over the spam. Cook until sauce thickens and the spam absorbs most of the sauce. Set aside.
Egg
  1. In a medium bowl beat eggs and Thai basil together until thoroughly combined.
  2. In a medium frying pan over medium heat, pour eggs in and fry until fully cooked. Cut out four rectangular slices similar to the size of the spam slices. Set aside.
Musubi
  1. Cut the seaweed sheets to get four 3-inch wide strips. 
  2. Split the rice into four equal parts. Wet hands and grab one portion of rice into hands and shape it while tightly packing it into the size of the spam slice. Place a slice of egg and spam on top the rice. Wrap the musubi with a seaweed strip. Repeat three more times. Serve and enjoy!
