Picnic Skewers w/ Thai Basil & Roasted Mushrooms

These picnic skewers are so easy and customizable! Our Thai basil brings all the flavors of each ingredient together with every bite!

Ingredients

Roasted Mushrooms
  • 1 large portobello mushroom, destemmed, ¼-inch thick slices
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, grated
  • 1 sprig rosemary
  • Salt and black pepper
Skewers
  • Cheddar cheese (or your favorite cheese), thinly sliced/cubed
  • Cherry tomatoes
  • 20 basil or Thai basil leaves
  • ¼ pound of salami/capocollo, thinly sliced
  • toothpicks
Optional
  • Assorted fruits
  • Crackers
  • Pickled foods

Instructions

Roasted Mushrooms
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a small bowl mix the balsamic vinegar, garlic, and rosemary leaves together.
  3. Line your baking sheet with foil. Brush some olive oil on the foil. Place the slices of mushroom on the foil and spread them evenly. Brush the mushroom slices with the olive oil and then the balsamic mixture evenly. Lightly sprinkle some salt and black pepper. Bake for about 10 minutes, or until slices are browned.
Skewers
  1. Get creative and place one of each ingredient onto a skewer in any order you would like. Fold the salami and mushroom slices so that you can pierce it with the toothpick. You can also roll together the ingredients by using a deli slice as a wrap and placing the other ingredients in the center then rolling it carefully. If you roll the ingredients, you need to use sliced cheese.
  2. Enjoy your picnic skewers with your favorite fruits, crackers, and pickled foods.

Notes:

·     You can also roast baby bella mushrooms instead of one large portobello. Roast them at 400 degrees Fahrenheit for 15-20 minutes in the same sauce and adjust the amount as needed.
