Our fresh butter lettuce pairs perfectly with this sweet and light dressing for a colorful simple salad!

Ingredients

Dressing
  • ¼ cup olive oil
  • 2 teaspoons freshly squeezed lemon juice
  • 1 tablespoon stone ground brown mustard
  • 1 tablespoon honey
  • ½ teaspoon nutritional yeast
  • Pinch of salt and black pepper
Salad
  • 1 can (16 ounces) chickpeas, rinsed and patted dry
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons mixed spices (1 teaspoon curry powder & 1 teaspoon chili powder) 
  • Pinch of salt and black pepper
  • 1 cup beets (variety of colors), boiled, peeled, and sliced
  • 1 head butter lettuce, roughly chopped
  • 1 bunch microgreens
  • ¼ cup chives, chopped
  • 6 sprigs mint
  • 1 small watermelon radish, thinly sliced

Instructions

Dressing
  1. In a small mixing bowl add the olive oil, lemon juice, mustard, honey, nutritional yeast, salt, and black pepper. Whisk together to combine.
Salad
  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a small mixing bowl add the chickpeas, olive oil, spices, salt, and black pepper. Mix well and spread onto a baking sheet evenly. Place in oven and bake for 20 minutes, or until chickpeas are brown and crispy.
  3. While the chickpeas are roasting, start boiling some water in a pot for the beets. Make sure you wash the beets before boiling. There should be enough water in the pot to cover the beets. Cook the beets for 20-30 minutes (cook time will depend on how large your beets are), or until tender (to test: pierce with a knife and it should easily go through). After the beets are done cooking, cool them in cold water for a few minutes so they are not piping hot when you peel the skins off. The skin should easily peel off.
  4. In a large mixing bowl add the lettuce, microgreens, chives, mint, chickpeas, and beets. Add the dressing to your liking and toss together. Enjoy!

Notes:

·     When you are peeling the beets your hands will get temporarily stained from the color! Use gloves if you want to avoid this.


·     You can experiment and use any spices you want for roasting the chickpeas. They are also great to snack on!
